CHARCOAL VS. GAS

It's been a long time since I've used charcoal for grilling but I'm going to tonight. Call it nostalgia as I remember my dad stoking the coals to get to that beautiful grey often times at the sacrifice of his eyebrows and arm hair as he used the lighter fluid generously to expedite the coals. Soon he would place the burgers and hot dogs on the grill abandoning them in quest of a cold one then scurrying back as the beginnings of a forest fire flamed up in the grill, I think this explains why I like my hot dogs blackened a bit and my burgers well done. There is something about the taste charcoal infuses that appeals to me and probably the reason I never got rid of the old grill. Yep, it's a little more work and a little more time but I will close my eyes and head to the past for a few seconds to remember the comedy that came before the meal.
